Christmas Tradition

For as long as I can remember my mom and I have made a tradition of going to The Nutcracker ballet every December around Christmas time. We love it! We got to go yesterday night and it was so good, probably the best (besides the skin tight, nude colored tights the men wore...hah yikes!).
 Even though my mom and I are not dancers by any means we love this tradition and recommend it!

New Additions to the Wilkey Household

Recently we have gained a lot of fun things in our cute apartment.

This chair below used to be BRIGHT orange and very retro, it was a really cute chair and it had a lot of potential (and it was free!) So I took it in and covered the lovely orange with this cute chevron fabric. And it is now gracing our bedroom, I love it!


And a Piano!!!!! It was a retired piano in a church building and it was a steal of a deal! It's crazy how it all happened, because that is just about the last thing on our list to get! Hopefully now I can just get back into playing... 


It has been so fun adding to our home, I wonder what will come next!

Big Decisions and Big Changes

Ever since I was in high school I have wanted to become a nurse. I have gone through courses supporting this decision and I have taken the steps to get jobs that are involved with healthcare where I would be surrounded by nurses. I have really enjoyed it, I love helping people and as of late I have found it very rewarding working at the hospital. 

Although, I think that being a nurse would be an awesome job, over the last few weeks I have had this feeling that I need to look into something else. I have looked into several different majors, had a few emotional breakdowns, prayed, went to the temple, and considered all of my options. And I have decided to change my major...to something that I have previously never considered for myself. I am so excited to get started.

I talked with an advisor and now I am going into Elementary Education, with an emphasis in Physical Science. And after school (as of now) I am hoping to work in a middle school. 


 Such a big change!
It's weird to think that my dream of becoming a nurse is no longer there, but I can't wait for what is ahead of me!

The Cozy Time of Year...

The fall colors this year have been wonderful! I have never seen such vibrant colors up the canyons here in Utah! It's exciting to see everything changing. It's not only looking like fall, it is feeling like it too! It is getting chilly!!!
You know what chilly means....bring on the cute boots, coats, scarfs, hats, hot chocolate, pumpkin anything, fuzzy socks, tons of blankets, cuddling, and anything that looks cozy! :)



Speaking of boots...I got this lovely pair the other day at Old Navy! Only mine are dark brown!
Yay for cute boots! I can't wait to wear em!

Getaway Time!

It is so hard to come home to real life after having 9 days of fun down in California!
We were so excited for our trip and we had such a good time, can't wait to go on 
another cruise with my hottie hubs :)
We did a lot of fun things, but instead of me writing about it all, here are some of our pictures! 


The day after we got to Cali, we went to Disneyland!


We had such a great time being big kids riding the rides. (Excuse my hair in this picture...we just got off Space Mountain, my hair was crazy!)


The next day we boarded this beauty for a 4 day cruise, the Mexican Riviera.


Cruises are wonderful...we played a lot of mini golf, laid out on the decks, went down water slides, slept/relaxed a ton, watched several movies, and ate way too much delicious food! 


Our first stop on the cruise was Catalina Island...it was Beautiful!


In Catalina we wanted to be adventurous, so we went parasailing!




I was so nervous to go, but it was so cool! It was something that Jon and I had both been wanting to do, we had a great time. After getting back on the boat, the boat was surrounded by tons of dolphins. It was amazing. I tried to get pictures several times, but I failed. All the dolphins just put a cherry on top of our parasailing adventure!


The next day we were in Ensenada, Mexico. It was a very interesting place, we chose to go on a tour to see El Bufadora (aka The Blow Hole). It ended up being really cool. The picture above is of the area between the rocks before the water shoots up. It was so pretty!


The water would shoot up almost two times in a minute, it was awesome.



Leading up to the blow hole we walked through a flea market & had a fun time! They were all really pushy down there...Jon did not buy this cute hat but we did leave with a Mexican blanket and a cute leather purse! 





After our cruise we stayed in some really nice hotels & enjoyed our time relaxing in Long Beach & St. George. In Long Beach, we loved this place called The Pike. It was just a cool little area in the city with tons of restaurants, a ferris wheel, pier, the aquarium, & some fun shops. Jon and I could have stayed there for awhile! But that's just about the end of our whole trip, we got home Sunday night after having dinner with my wonderful parents (seriously...I feel so blessed to have such a great parents, I love them so much).

We had such a fun time & can't wait for our next vacation! Now back to reality!

Flat Tires and Some of the Best Cookies Out There!


Jon and I haven't had the best of luck this last week. But we have had quite the experience!
Last Saturday we went to Idaho Falls for my sister in law's wedding reception with two of Jon's brothers. After the reception we stopped off and had some dinner and then we were on our way back to Logan. About half way through the drive, in the middle on no where, on I15, we got a flat tire.
 The guys changed the tire and then we were on our way again. After about a mile...our spare got a flat as well!! By that time it was about 1 in the morning. We tried calling family and we considered getting a tow. Nothing worked out for us, so the 4 of us spent the night in the small car (worst night of sleep ever!!!!) and then around 10 the next morning Jon's parents came and rescued us. I would not wish that upon anyone else, that night was something else! 

To add to the story, on Monday, Jon and I went to Ogden to pick up a couple things from my parent's home. On our way back we stopped in Brigham City and got some yummy shakes. Out of that parking lot, I ran over a nail and my car got a flat tire!!! So we pulled over and put the spare on. Luckily my spare made it through the canyon back home. Like I said, we have already had quite the week!
But in good news...I now know how to change a flat tire! Let's just hope that I won't have to use those skills anytime soon again!


In other news...please make these yummy cookies! They will brighten up any kind of day!

Here's an update on everything else!
- In 10 days my mom and I will be running the Top of Utah Half Marathon. Yikes! 10 days!
- Yesterday I ran 12 miles!!!! I can't believe I did it, but it felt so good! 
- Tomorrow Jon's family will be coming home to Logan to be here for his sister Lizzys' wedding. I am so excited to see everyone.
- Two weeks from today my little brother Jeremy will be leaving on his mission to Washington!
- Tyler and Michelle will also be coming up soon to see him off, I can't wait to see them!
- I bought the cutest bathing suit the other day, I can't wait for it to get here. Click here to see it!
- In about a month we'll be leaving for our vacation & cruise, we're so so excited
- So much is going on! I am so excited to see family and to end the summer off with a bang!

First Full Day of Vegetarian Meals!

First of all...to answer all questions...we are not becoming full fledge vegetarians.
We (mostly me) have decided to have one full day a week with no meat!
I decided this a little while ago, but we are finally getting around to it!
So here is what we have had today...



Breakfast: Honey Wheat Banana Pancakes with Apple Juice

Lunch: Peanut Butter and Jelly Sandwiches with an orange

Snacks: Chips with Guacamole (yum!)

Dinner: Tortilla and Black Bean Pie


They were all such simple meals and still very good and filling.
So all in all...it was a satisfying and successful first vegetarian day!

I am sure there are a lot of yummy vegan meals out there but are there any yummy meat-free meals I am missing out on that you are aware of?!

Honey Lime Chicken Enchiladas and Summer Life :)

We have a new favorite recipe....it is seriously so delicious and so easy! I got the recipe from a friend at work, you can either look at the recipe on here or click here to go to her website to see it. You have got to make this! :)


Honey Lime Chicken Enchiladas
Ingredients
9 TBS. Honey
7 TBS. Lime Juice
1-1/2 TBS. Chili Powder
1/2 tsp. Cumin
1 clove Garlic, crushed
1 lb. Chicken, cooked and shredded
1 can Black Beans (drained and rinsed)
1 can Corn (drained and rinsed)
Tortillas
Shredded Monterey Jack Cheese
16 oz. Green Enchilada Sauce 


Directions:
1. Mix together the honey, lime juice, chili powder, cumin, and garlic. Toss sauce with the chicken and let it marinate for a few minutes.
2. Add the black beans, corn, and a small handful of cheese. Mix well.
3. Pour about 1/2 cup of enchilada sauce on the bottom of a 9x13 pan. 
4. Fill tortillas up with the chicken mixture and line in pan.
5. Pour the rest of the enchilada sauce over the tortillas and then sprinkle it with cheese.
6. Bake at 350 for 30 minutes or until the top is brown/crispy.
7. ENJOY! :)


In other news our summer has been great and super busy....






- I'm loving my new job at the hospital, I am now a full time employee there and I am also still working with my homecare job. All in all it has been keeping me really busy!
- Jon is going to school this summer and he has been working quite a bit as well.
- I'm still training for the Top of Utah Half Marathon coming up in August. It has been hard, but I am so happy to be getting back into shape. 
- I have been using this website for good at home workouts to build up your core. I have been so sore because of these workouts but I am loving it!
- My little brother got his mission call this summer as well! He will be going to Washington and he leaves August 29th. I am so proud of him, he is such a great brother. 
- We're going on a cruise!!! We have been saving up and we bought our tickets the other day! In September we will be cruisin' our way down to Mexico! And we are so excited to hopefully be able to spend some time with Tyler and Michelle as well! 
- I am loving this product for face wash and moisturizing. It is so nice and refreshing! It's called Yes to Tomatoes. 
- I have been a little obsessed with The Bachelorette. I sure do hope she chooses Jef or Sean! :)
- We're headed to Provo in a couple weeks to float down the Provo River with some of Jon's friends and I am so excited! 
We are not ready for summer to be over...we still have awhile but it's going to be over before we know it!

Busy Bee...

Life has been really busy! 
- I started my new job at the hospital a few weeks ago 
{and I am Loving it!}. 
- Jon and I are finishing up our semester of school - Finals next week! -
- We're trying to sell off our apartment. 
{My brother and sister in law are moving to California (we are really going to miss them but we wish them the best!) and we're moving into their nice apartment in a couple weeks!}
- Trying to squeeze in time to work out and eat healthy meals
{My mom and I signed up for the Top of Utah Half Marathon...yikes!}
- The past few days Jon and I have both been addicted to Words With Friends
- Been doing crafts here and there
- Jon and I are both so ready for the summer!

 Jon gave me this pretty flower on my first day of work at the hospital...it lasted almost a month!
Soon after this flower died, Jon surprised me with another and it is now gracing our dinner table :)
Jon is so great, I sure do love him!

What a Week! :)

1.) The Hunger Games books are amazing! I have yet to read the third one but man oh man! If you haven't read these I recommend it, I could not put them down!

The movie comes out this week! Yay! It looks really good, all of the characters I have seen in the previews are just as I would have imagined. We won't be seeing it this week but hopefully we will next week sometime! I just love this song from the soundtrack by Taylor Swift ft. The Civil Wars....


2.) Speaking of The Civil Wars...they are coming to Salt Lake City in May! Maybe...just maybe...I'll convince the Mr. to take me! :)

3.) This week Jon and I are both back to school after a nice spring break. Those breaks never seem to last long enough! But hey only 6 weeks left! It will be over before we know it.

4.) I GOT A NEW JOB! I am now a CNA for the Logan Regional Hospital. I am so excited! I have always wanted to work in a hospital and now I will be! My first day is Friday...wish me luck! :)

5.) We get to go the cabin this weekend! Finally! Every time we had planned on going this year so far has fallen through...due to sprained ankles and work. But this week we are going and we are so excited to get away from Logan for a little while and spend some time with my wonderful family :)

6.) I made Cinnamon Rolls last weekend and they were yummmmy! They were called Vanilla Pudding Cinnamon Rolls with Cream Cheese Frosting. You can click here to get the recipe. I highly recommend it! And unless you are cooking for an army, you might want to half the recipe or even make one quarter of what it calls for! You will be eating these for breakfast, lunch, dinner, and the snacks in between! Make them! ;)

7.) My mom, Tyler, Michelle, and Jon and I are running a half marathon in August and I am so excited! I started up running/training for it this week and it feels so good to get back into working out! :) Any tips or workouts that you love to do?

A favorite...

As a newlywed couple there are three things that Jon and I love when it comes to our meals...

1) They should be tastey!

2) Affordable...

3) And Leftovers are a big plus! :)


We get ads for local grocery stores all the time & we have noticed that every week Maceys has a screamin' deal for affordable, tastey meals. We have tried their Crock Pot Lasagna, Crock Pot BBQ Ribs, & the delicious Pork Barbacoa! They were all great meals & they gave us leftovers in the end. We have made the Pork Barbacoa a few times now & it is great!
Here's the lovely recipe:

Pork Barbacoa

Ingredients:
- 4 lb. Boneless Pork Butt Roast
- (5) 8 oz. Tomato Sauce
- 1 & 1/2 cups Brown Sugar
- 4 cups Dr. Pepper
- 3 tsp. Garlic Powder
- 4 tsp. Cumin
- 3 tsp. Molasses

(If you don't want it to be too saucey you might want to minimize the amt. of tomato sauce/dr. pepper you put into it)

Directions:
1. Mix garlic powder, cumin, molasses, tomato sauce, brown sugar, and dr. pepper in a large bowl.

2. Put pork roast in crock pot and pour mixture over. Cook on low for 6-7 hours.

3. Shred meat and return to crock pot, cook for an additional hour still on low.

4. Serve in tortillas and garnish with cheese, lettuce, sour cream, and salsa!

5. Enjoy!

Lovin' the Weekends

For Jon's Birthday I got him tickets for the Jazz/Heat game for last Friday night, and it was so much fun! What a game!

Normally I don't care too much about basketball and who wins, but I was so into the game on Friday. Jon and I both went to the game thinking that the Heat would blow away the Jazz but wow! The Jazz were playing so good, we ended up winning by one point!


We had such a fun Friday!
Saturday was filled with...
- Work
- Crafts
- Work
- Homework
- Food (we made homemade hamburgers! Yum!)
- Larry Crowne (not recommended, but it was alright)
- Dessert
- and much needed Sleep :)

And also Saturday was the day that my parents and my little brother took their new snowmobiles out for the first time! They took this trail out to Hardware Ranch and ended up getting stuck! So stuck that they needed to find help! My mom and Jeremy ended up having to hike right around 5 miles in waist deep snow and my dad went on his own to find some help - while getting stuck again himself. How scary. They were able to get a lot of help from a wonderful search and rescue crew and thankfully they are all ok! I'm so thankful that our Heavenly Father was looking out for them!

Hello Panko Pork Chops!

This was the first time that I have ever cooked pork chops, and I must say that I will be cooking these panko covered babies again and again! They were so yummy! I found the recipe here on pinterest of course! I keep forgetting to take pictures (so sorry), if you click on the here above you'll get a picture and the delicious recipe!

But here's the recipe if you just want to stay here...

Crispy Panko Pork Chops (dinner for 2)

Ingredients:
- Canola Oil
- 2 Thick Pork Chops (recipe said bone-in, but I used boneless & it was still tastey!)
- 1/2 Cup Panko Crumbs
- 2 Tablespoons grated Parmesan Cheese
- 1 Tablespoon minced Italian Parsley
- 1/4 Cup all-purpose Flour
- 2 Eggs, lightly beaten
- Salt & Pepper

Directions:
- Preheat oven to 375, season pork chops with salt and pepper and set aside.
- Set three bowls out, 1st with panko crumbs, parmesan, parsley, and salt, 2nd with flour, and 3rd with the eggs
- In a skillet heat 3 tablespoons of oil over medium high to high heat.
- Cover pork chops first in flour, then the egg, the the panko mixture (make sure to coat evenly)
- Add pork chops to skillet and cook until golden brown and crispy on each side
- Remove the chops from the skillet and place them in a cookie sheet, cook the pork chops in the oven, uncovered, until they reach the internal temp. of 130 (this could take 15-30 minutes, just check it after 15 and so on until you reach your desired internal temp.)
- And EnJOY! :)

I was a little worried about cooking pork chops because I have never done it before and sometimes pork chops can be a little bland, but man these chops were so easy to cook and so darn tastey! The crunch was wonderful! If you're looking for a yummy dinner, make these pork chops!

The Yummy Dinners Continue... :)

I wish that I would have taken a picture of our yummy dinner last night, we were so hungry so I did not even think about taking a picture! But for our wedding my mom's good friend Tammy gave us this Secret Recipes cookbook and it is so fun and the recipes we have tried are so good!

Last night we made Millie's Meatballs - SOOO good! :)
Here's the recipe:

Ingredients:
1 egg
1 envelope dry onion soup mix
1 tsp. garlic from a jar
1/2 tsp. black pepper
1 1/2 lb. lean ground beef
2/3 cup italian seasoned bread crumbs
3/4 cup evaporated milk

Directions:
1. Preheat oven to 350 and spray a 9x13 inch baking dish with nonstick spray.
2. In large bowl, combine egg, soup mix, garlic, and pepper. With a fork, mix in ground beef and bread crumbs.
3. Stir in evaporated milk, mixture should not be too dry, but well moistened.
4. Roll into about 24 golf ball sized meatballs and put them in baking dish (not touching each other)
5. Cover with foil or glass lid and bake for 28-35 minutes.
6. And serve with a sweet and sour sauce or with spaghetti :)
7. ENJOY!

We had the meatballs with some spaghetti and it was so delicious. The meatballs were just perfect, juicy, flavorful, and oh so tastey! I highly recommend this recipe!

(Side note to Coco and Man-E....if you loved the meatlove...you'll love this!) :)

And then for dessert....

My old roommate would make this and it was so good! For our wedding she gave us a bundt pan and this recipe and it so good! (Thanks Anna!)
It is a Chocolate Bundt Cake, it is so moist and so addictive! Here's the Recipe:


Chocolate Bundt Cake
For the Cake:
2 cups sugar
1 3/4 cup all purpose flour
3/4 cup hershey's cocoa
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp. salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 tsp. vanilla extract
1 cup boiling water

1. Heat oven to 350 and grease and flour bundt pan.
2. Combine dry ingredients in large bowl. Add milk, eggs, oil, and vanilla.
3. Beat on medium speed for 2 minutes
4. Stir in boiling water (batter will be thin) Pour mixture into pan.
5. Bake for 35-45 minutes/until toothpick comes out clean. Cool for 10 min. then remove from pan to a wire rack. Cool completely and frost with chocolate glaze.

For Chocolate Glaze:
1/2 cup semisweet chocolate chips
2 tbsp. margarine or butter
2 tbsp. corn syrup

Place chocolate chips, margarine, and corn syrup in a microwave dish. Microwave uncovered for 1-2 minutes, until chocolate can be stirred smooth.



Sorry to go from yummy food to this...but on another note. My hubbie has been injured for a little over a week now! He sprained his ankle pretty bad when he was playing ward basketball. I feel so bad for him, he's having a hard time walking around still and his foot has been so swollen. And as you can tell he's got some colorful bruising going on! Poor guy. Please send him your love if you see him or talk to him! :)

A simply divine pizza!

Portobello Pesto Pizza
- your tastebuds will love this! -



Ingredients:

For the pizza dough click here for a great and simple recipe.

For the toppings:
1 tablespoon unsalted butter
1 lb. mushrooms sliced
1/4 of a red onion, thinly sliced
1 cup pesto (homemade or store-bought)
8 oz. provolone cheese, shredded
1/2 cup grated parmesan cheese

Directions:

1. Take all of the steps to prepare your pizza dough. Pizza dough recipe here.

2. Preheat your oven 450

3. In a skillet melt the butter over medium heat and then add the sliced mushrooms and onions. Cook through, stir occasionally. Cook until the mushrooms are softened and brown.

4. Flatten your pizza dough in a pizza pan or cookie sheet pan.

5. Spread pesto sauce over the dough just like you would pizza sauce. Then spread the mushroom and onion mixture over the pesto sauce evenly and then top that off with the provolone and parmesan cheeses.

6. Bake until the crust edges are brown and the cheese is a golden brown in some spots. (Usually somewhere between 8-12 min.)

7. Slice and Enjoy!


This is definitely a Jon and Jess favorite! I made it last night for dinner and our mouths were just watering for more! It has great rich flavor, the pesto sauce is so yummy!

Mmhm Mhhm Chicken!

Lemon Sugar Roasted Chicken


Wow now talk about a great burst of flavors with this yummy chicken! I got the recipe from pinterest of course, but that lead me to this wonderful blog...click here.

But here's the recipe if you just want to get straight to the tastey recipe!

Ingredients:
- 1 lemon, zested and juiced (I added a little more!)
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon dried oregano
- 1 tablespoon sugar
- 1/4 teaspoon salt
- 1/2 teaspoon pepper
- 4 bone-in and skin-on chicken breasts
- 1 red bell pepper, chopped
- 1 tomato, chopped
- 1/2 small onion, sliced thinly

Directions:

1. Preheat oven to 400 degrees F.

2. In small bowl, whisk lemon zest, juice, garlic, oil, oregano, sugar, salt, and pepper.

3. Place chicken (skin side up) in a greased glass baking dish. Arrange the bell pepper, tomato, an onion around the chicken. Pour lemon mixture evenly over the top.

4. Cover dish with aluminum foil and bake for 20 min. Remove foil and spoon pan juices repeatedly over the chicken to moisten.

5. Bake uncovered, basting every 10 min., for about 30 more min. Serve chicken and vegetables with all of the pan juices.

This was so tastey, talk about an easy and deluxe meal! Jon and I loved it! Try it out if you like the lemon flavor and chicken! Let me know what you think if you give it a try! ;)

Yummy Crockpot Dinner

Slow Cooker Polynesian Pork Ribs
(This was so good and it was so easy! Crockpots are amazing.)


Ingredients

Ribs:
2 lb. Boneless country-style pork loin ribs
1 Clove garlic, finely chopped
1 Small onion, sliced
1 Can (8 oz.) crushed pineapple in juice, undrained (add more if you are a fan of pineapple!)

Sauce:
3/4 Cup ketchup
3 Tablespoons packed brown sugar
3 Tablespoons hoisin sauce
1 Teaspoon grated gingerroot

Serve over hot cooked rice.

Steps:
1.) Spray slow cooker with cooking spray and then place the ribs, garlic, and onion in cooker. Spoon about half (or more) of the pineapple with some of the juice over the ribs. Save some of the pineapple and juice for later!

2.) Cover and cook on low heat setting for 8-10 hours

3.) About 35 min. before serving drain and discard the cooking juices from the slow cooker. Then in a small bowl to the side mix ketchup, brown sugar, hoisin sauce, gingerroot, and the remaining pineapple with juice. Pour sauce evenly over ribs, increase heat to high and cook for an additional 25-30 min. or until the ribs are glazed and the sauce is hot.

4.) Serve over rice and enjoy!

Should I?

I am getting really bored with my hair and it is need of at least a trim. But I am now debating whether or not I should change up my whole hairstyle.
Here's what I'm thinking....

A little bit of a drastic change for me, but I think her haircut is super cute!


I am leaning more towards this bottom one of Sandra Bullock.
Maybe I'll just get a nice and safe shoulder length cut?

Yum!

I was going to get back on top of blogging but I definitely failed right away....but this is me trying to get back into the habit!

I sure do love cooking for my Mr. It is so fun to try new recipe's out and it is even funner when they turn out delicious!!!!! Here have been a few of our favorites!

Grilled Cheese Pizza Sandwiches
Need I say more?

These are so easy and so gosh darn wonderful!!! (Probably not the healthiest thing out there, but they are so good!)
All you do is butter one side of 2 pieces of bread and put the buttered side down on either a sandwich maker or a skillet and then put cheese, pepperoni, some oregano seasoning or pizza seasoning, and any other topping you would like on the bread. Then put the 2nd piece of bread over the toppings butter side up. And just cook it through!
After the sandwiches are all done cooking we heat up some spaghetti or pizza sauce to dip the sandwiches in! YUM!
