A favorite...

As a newlywed couple there are three things that Jon and I love when it comes to our meals...

1) They should be tastey!

2) Affordable...

3) And Leftovers are a big plus! :)


We get ads for local grocery stores all the time & we have noticed that every week Maceys has a screamin' deal for affordable, tastey meals. We have tried their Crock Pot Lasagna, Crock Pot BBQ Ribs, & the delicious Pork Barbacoa! They were all great meals & they gave us leftovers in the end. We have made the Pork Barbacoa a few times now & it is great!
Here's the lovely recipe:

Pork Barbacoa

Ingredients:
- 4 lb. Boneless Pork Butt Roast
- (5) 8 oz. Tomato Sauce
- 1 & 1/2 cups Brown Sugar
- 4 cups Dr. Pepper
- 3 tsp. Garlic Powder
- 4 tsp. Cumin
- 3 tsp. Molasses

(If you don't want it to be too saucey you might want to minimize the amt. of tomato sauce/dr. pepper you put into it)

Directions:
1. Mix garlic powder, cumin, molasses, tomato sauce, brown sugar, and dr. pepper in a large bowl.

2. Put pork roast in crock pot and pour mixture over. Cook on low for 6-7 hours.

3. Shred meat and return to crock pot, cook for an additional hour still on low.

4. Serve in tortillas and garnish with cheese, lettuce, sour cream, and salsa!

5. Enjoy!

  1. I've been searching for a while for a knock-off of Cafe Rio's recipe- how close is this one? It sounds yummy!

  2. To tell you the truth, it's a little similar to the Cafe Rio recipe but there's still a little difference. I feel like it's hard to get the right kind of sweetness like the Cafe Rio pork has! This recipe is really good though! :)
